Make sure the food is submerged during the entire fermentation process. Use some other suitable object to weigh down food fermented in the smaller pre- serving jars DELLA CASA 600, 800 and 1000 ml. Fermentation Keep the closed jar with food at room temperature (20 to 25 °C). Sauerkraut should ferment in a dark place. Set the valve to the “fermenting” position and leave the food to ferment for the required time . Notice: If the brine in the jar rises and loosens the lid as a result of the fermentation process, remove the excess brine, wash the lid under running water, put back on and set the valve to the “fermenting” position.
